Some of the problems progress from elementary level increasing difficulty so that the book is useful to food science as well as food engineering students.

It's OK

This is an excellent book to practice food engineering excercises. Very appropriate theoric review at the beginning of every chapter. However, I would suggest the author to include the answers to all the problems that are at the final of each chapter, or at least a web page to double check the answers to these exercises. Besides that, I would not be hesitated to buy it again. I like the fact is not a heavy or big book, more like a light pocket presentation.

The book is fantastic. Each chapter is addressed with proper depth of the subject. With many real examples and practical. The CD ROM that accompanies the book helps a lot in solving the problems. I recommend.
